Blue Cheese Chips

This recipe is super sonic simple and it is the sho nuff.

Blue Cheese Chips

This is whatvyou need-
5 cups of Zapp’s Kettle Chips
½ cup of diced tomatoes, drained
½ cup of spring onions with tops, chopped
½ lb. of bacon, cooked and chopped (optional)
¾ cup of Blue cheese crumbles

This is what you are going to do-
Place chips on a pizza stone or baking sheet. Layer tomatoes, onions, bacon and blue cheese.
Broil on high until cheese is melted approximately 2 – 3 minutes, watching carefully.
Serve immediately

Strawberry Jam and Better Butter Biscuits

food pics 141Amy- I saw a similar recipe to this and just knew I had to do our own recipe. Suz and I served these wonderful biscuits at a party and everyone just loved them. They are pretty darn easy and inexpensive to make. I love the flavors of the strawberries and lime; they work so well together. They are great right out of the oven or served with a dollop of ice-cream or homemade whipped cream,yum-yum.

Strawberry Jam and Better Butter Biscuits

What you need for the strawberry jam-
16 oz fresh strawberries, hulled and quartered
¼ cup sugar
1 lime, zested
1 lime, juiced
For the better buttered biscuits-2 ½ cups Bisquick
¾ cup sugar
1 teaspoon lime zest
1 stick cold butter, cut into slivers
¾ cup buttermilk
3 tablespoons butter, melted
Sugar for sprinkling

Make the strawberry goodness-
Yum-my, I love some strawberry goodness. Alright, this is what you need to do, get you a medium heavy bottom sauce pan out, add your strawberries and sugar and give it a good ole stir. Turn your heat to medium high and stir occasionally for about 12-15 minutes, watching very closely. Don’t you be burning those strawberries. Remove from the heat, add your lime zest and lime juice, stir it up real good and let those babies cool. For the better butter biscuits-I get so darn tickled at the name, “better butter biscuits”. Some friends and I went through Mrs. Weiner’s one morning before high school to get some breakfast. My friend asked me what he should order. I told him to get us 1 dozen of the “better butter biscuits”. He ordered them that way and the lady was like, “huh, I don’t know what you are talking about”. He just kept saying, “better butter biscuits; we want the better butter biscuits”. It was so funny and we have laughed about that for years. So to make these better butter biscuits, get you a large bowl out and add your Bisquick, sugar and lime zest. Using your clean fingers work the butter slivers into the Bisquick and sugar mixture. Add your buttermilk and mix until just combined. Flour you a surface, plop dough out and knead dough for a couple of minutes. I divide the dough into 2- 3 pieces because it makes it easier to work with. You can do it the way you want to. Roll dough about ½ inch thick. Use a 2 ½ inch biscuit cutter to cut out the biscuit rounds. Brush each biscuit with some better butter and sprinkle lightly with sugar. Use the back of a small spoon or your thumb and make a divot in each biscuit and then spoon strawberry mixture into each divot. Place on a greased cookie sheet and bake for 12-15 minutes or until golden brown and no longer doughy.

Beach Bread

20130508-063400.jpg. We could write a chapter on Beach Bread but ain’t nobody got time for that. We have made variations of this recipe FOR-EVA. This is an old trusty- We made it, we liked it and well, we are going to make it again. We made a variation of this recipe on Cooking with Paula Deen and it was a HUGE hit.

Beach Bread
What you need-

½ stick butter
1 clove garlic, minced
¾ cup ripe tomatoes (diced and drained)
Cajun seasoning (Slap ya Mama)
½ cup mayonnaise
3/4 cup Colby & Monterey Jack Cheese (or any of your favorite cheese)
3 Tbs. fresh parsley
1 loaf French bread

What you do with the stuff we said you needed-

Get that oven heated to 350 degrees.
In a large skillet melt butter over medium heat. Add your garlic and tomatoes and cook for a few minutes.
Season with Slap ya Mama. In a medium bowl mix mayo, cheese and parsley. Combine butter mixture with mayo mix. Cut loaf of bread in half and then cut bread lengthwise so that you have 4 pieces. Spoon mixture on bread and bake for 5 minutes and then broil for an additional 3- 5 min. or until bread is crisp and cheese is bubbly. Watch closely it will burn. Cut bread into individual portions. Use bread for dipping and sopping.

Party Sausage Sandwiches

We love to have plenty of appetizer recipes. This one has been a favorite for years and years with our family and close friends. It is good for parties, get-togethers, or heavy appetizers for the family. This is a savory sausage surprise that is always a hit. It’s like there’s a party going on in your mouth. It freezes well, so you can have batches in the freezer and when you need a quick appetizer…viola…in 20 minutes time, you are set to go. We are well aware that Velveeta isn’t the healthiest choice out there and we know that it is pasteurized, but man, does it work well for this recipe!

Party Sausage Sandwiches

Get the ingredients together-
1 pound ground beef
1 pound ground sausage
1 Tablespoon Worcestershire sauce
1 teaspoon oregano flakes
2 fresh garlic cloves, minced -or- 1 tsp. garlic powder
1 pound Velveeta cheese, chopped in cubes
2 loaves party rye or sourdough bread (These loaves have small pieces of bread, approximately 2 inches X 2 inches.)

Let’s put these party sandwiches together-

Get you a big ol skillet out and brown both meats. Stir it good and make sure that both meats mix together. We like to use both sausage and ground beef for this one, extra flavor and goodness. Drain the excess grease off of the meat. The sister’s got to cut back somewhere. Return meat to pan and add the Worcestershire sauce, oregano flakes and garlic. Sauté for about a minute, you want to be able to smell the garlic cooking but you don’t want to burn it. Add the gourmet cheese cubes to the meat. Cook until cheese has melted and is gooey. Take your pan off of the heat and get ready to assemble. Line a sheet pan with foil, so you don’t have to scrub the cooked cheese off of it. Go on and put you a heaping dollop of the cheesy mixture onto the bread slices. Slide it on in a preheated 350 degree oven for about 10-15 minutes. Let it cool before serving, the hot cheese will tear the roof of your mouth up. Trust us, we know from experience.
To freeze: place on cookie sheet and put in freezer for 45 minutes. Then place into freezer bags.

Fiery Cajun Shrimp

Fiery Cajun Shrimp

This is an “old trusty”. We made it, we liked it and we are going to make it again. This would have to be one of our all-time favorite recipes. We have been making this forever and people always love it. The sauce is unbelievably good. With that being said, make sure you serve plenty of French bread for sopping up the spicy buttery goodness.


Get these ingredients-

2 sticks of butter, melted
3 tablespoons of Worcestershire sauce
2 tablespoons of fresh lemon juice
1 tablespoon of ground black pepper
2 teaspoons of Loiusana hot sauce
2 garlic cloves, minced
2 teaspoons Cajun seasoning
2 lbs unpeeled medium shrimp
1 lemon, thinly sliced
2 Tablespoons of fresh parsley

Let’s make it-
Alright people, this is so simple to make. Get that oven going and heated to 400°F. Stir together the first 7 ingredients. Pour the mixture into a large casserole dish. Add your shrimp and top with lemon slices. You are going to want to bake uncovered for about 20 minutes, stirring mixture twice, until shrimp are pink. This is important– after the first 10 minutes check the shrimp several times. As soon as they start turning pink, take them out pf the oven. They will continue cooking. You don’t want overcooked shrimp. Add parsley and enjoy!
