Low Fat Chocolate Delight

Suz and I are trying to shed some pounds before the Paula Deen cruise. We have really been trying to watch what we eat (except last night when we went to Mexican restaurant and ate every dip they make). We are always having a hankering for something sweet and if the hankering does not get met it gets kind of ugly. So with that being said, we had to come up with some desserts that we can have while we are dieting. This dessert fulfills our hankering while not adding so many calories and fat. You can omit the crust and lose even more calories and fat, that is totally up to you.

Get-
1 cup flour
1 stick butter
1 cup nuts, chopped (optional)
1 large box Chocolate pudding, low fat
2 cups milk, 1%
1/4 cup low cal granulated sugar (like splenda)
1/4 cup powdered sugar
1 8 ounce block reduced fat or fat free cream cheese
1 large tub reduced fat or fat free whipped cream

Let’s get it on-
If you don’t want the crust, skip on down to the pudding directions. Preheat oven to 350 degrees. Combine flour, butter and nuts (if desired). Bake for 15 minutes and let cool completely. Add milk and pudding mix to a large bowl and use a hand mixer to combine. In another bowl combine cream cheese and sugar using hand mixer. Add 1 cup of whipped cream to the cream cheese mixture. Top crust with cream cheese mixture. Then top cream cheese mixture with pudding.
Add remaining whipped cream to the top. Chill before serving.

Low Fat Strawberry Trifle

It is that time of year when people are tired of pigging out and are looking to lose some weight. We are among those people. Just because you are dieting doesn’t mean that you can’t have a dessert. This recipe is one of our favorites and can be made with low fat ingredients or full fat ingredients. Both recipes are very delicious. It is great with any berries or any combination of berries. We also like to add bananas to this recipe. It is so easy and people love it. Your family will never know that this is a low fat dessert.

Low Fat Strawberry Trifle

Ingredients:
1 large angel food cake, cubed (bite size)
1 (16 ounce) container frozen sliced strawberries in sugar, thawed (can slice your own strawberries and sweeten with splenda)
1 (8 ounce) block reduced fat or fat free cream cheese, softened
1 (14 ounce) can fat free sweetened condensed milk
1 (12 ounce) container reduced fat or fat free whipped topping
Fresh strawberries, sliced (for garnish)
Mint leaves (for garnish)

Directions:
In a mixer combine cream cheese and sweetened condensed milk. In a trifle bowl layer 1/3 of the cake, strawberries, cream cheese mixture and whipped topping. Continue until all ingredients are used, ending with whipped topping. Garnish with fresh strawberries and mint leaves.

Low Fat Banana Pudding

Even if you are not trying to lose weight you should try this recipe. It is not lacking in goodness. The only thing that this recipe lacks is all the extra fat.

Low Fat Banana pudding
Ingredients:
1 large box French vanilla pudding, low fat/sugar free
2 cups milk, reduced fat
1 can sweetened condensed milk, fat free
1 8 ounce block cream cheese, room temperature, reduced fat
1 large tub whipped cream, reduced fat or fat free
6-8 bananas, sliced
1 box Vanilla wafers, reduced fat
Directions:
Add milk and pudding mix to a large bowl and use a hand mixer to combine. In another bowl combine cream cheese and sweetened condense milk using hand mixer. Add cream cheese mixture to pudding. Fold in half of the whipped cream and bananas. In a glass bowl, line inside and bottom with cookies. Add a layer of pudding and then whipped cream. Continue layering until all ingredients have been used, ending with whipped cream. Garnish with cookie crumbs. I use a zester or grater to make cookie crumbs.
