Shrimp Stock

Having shrimp for dinner?  Don’t throw away the shrimp peels.  The shrimp peels make a wonderful shrimp stock that you can freeze and use later.

  • tbsp spoon of oil
  • shrimp peels
  • bay leaf
  • carrot
  • 2 celery stalks
  • 1 onion
  • clove of garlic
  • salt and pepper to taste
  • Heat oil, add all ingredients

Cook for a few minutes.  Add 8 cups of water.  Bring to a boil and then reduce heat to low.  Simmer for an hour or so.  Strain, cool, freeze and use for your next soup or stew.

Fruit Salad

Fruit Salad

  • 2 bananas sliced
  • 1 apple cubed
  • 1 avocado sliced
  • 1 can of mandarin oranges, drained
  • ½ cup sliced strawberries
  • ½ cup of grapes cut in half
  • ¼ cup of toasted pecans

Dressing

  • 1/4 cup orange marmalade melted
  • ½ teaspoon of splenda
  • 2 tablespoons of orange juice
  • 3 tablespoons of vegetable oil
  •  Juice from 1 lemon
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarse ground mustard

Combine the fruit, raisins, and nuts in a glass bowl. Combine ingredients for dressing. Add the dressing and stir gently. Serve on a bed of salad greens.

Sausage and Cheese Quiche

On my way home from work I was trying to come up with something I could cook for dinner without going to the grocery store. Thankfully I had everything at home to make this recipe. If you do not have a pie crust you can definitaly make this without it. Just pour the mixture in a pie plate and bake. Also, if you don’t have sausage you can use bacon, ham, turkey or vegetables. I am serving fruit salad on a bed of salad greens with mine tonight. I will post that recipe after I make it. I hope you enjoy!

Sausage and Cheese Quiche

  • 1 lb pork sausage
  • 1/2 cup onion, thinly sliced
  • 2 cups sharp cheddar cheese, grated
  • 1 tablespoons of flour
  • 3 eggs
  • 1 cup of half and half
  • 1 tablespoon parsley flakes
  • salt to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon white pepper
  • 1 (9 inch) deep dish pie shells

Directions:

  1. Pre-heat oven to 350
  2. Cook sausage.
  3. Sauté onion in pork fat.
  4. Combine cheese and flour and stir in with sausage and onion.
  5. Pour in pie shell and mash it down.
  6. Mix all other ingredients together and pour in pie shell
  7. Bake at 350°F for 35 to 40 minutes or until set.

Cream Cheese and Crackers (Party Appetizer)

Need a quick appetizer for a party or for friends and family?

  • Take a block of cream cheese and dredge in a packet of dry ranch or italian salad dressing mix.
  • Serve with crackers

Crispy French Fries

Let raw potatoes stand in cold water for at least half an hour before frying to improve the crispness of french-fried potatoes.

Refresh Stale Chips, Crackers, or Cereal

Refresh stale chips, crackers or cereal by putting a plateful in the microwave for 30 – 45 seconds. Let cool for 1 minute . Enjoy!

No Fruit Fresh

Cover easily discolored fruit such as apples, bananas, and peaches with lemon, orange or pineapple juice or with an acidic dressing.

Softening cream cheese

To soften cream cheese:

  • Microwave an 8 ounce block for 2 -2 1/2 minutes at 30% power.
  • 3oz package will soften in 11/2 – 2 minutes.
