The Sisters Marvelous Mac-N-Cheese Soup

At last my love has finely come along! This soup makes me want to slap my self! It is defiantly the sho-nuff comfort food! I truly hope you get as much pleasure from this as we do!

Ingredients

2 cups dry elbow macaroni

½ cup onions

2 Tbsp, unsalted butter

1/3 cup all purpose flour

½ cup dry white wine

2 cups chicken broth

2 chicken bouillon

1 Tbsp, course ground mustard

2 dashes Louisiana Hot Sauce

1 Tbsp, Slap Ya Mama Cajun Seasoning

2 cups whipping cream

2 cups shredded Sharp Cheddar Cheese

2 cups shredded Gouda Cheese

1 Tbsp, fresh lemon juice

Salt and pepper to taste

¼ cup crumbled blue cheese

2 Tbsp, minced fresh chives

Directions

Cook macaroni in a pot of salted water according to package directions; drain and set aside.

Cajun Black Eye Peas

Don’t forget to eat plenty of Black Eyes for the New Years so that you are sure to have plenty of luck for 2014.

Cajun Black Eyed Peas
Ingredients:

1 pound dried black-eyed peas

½ pound Cajun sausage, sliced thin
¼ cup vegetable oil
½ cup onion, diced
½ cup celery, diced
½ cup green bell pepper, diced
3 tablespoons garlic, minced
1 ½ tablespoons flour
4 – 5 cups chicken stock
½ tablespoon of chicken bouillon granules
½ cup sliced green onions
¼ cup chopped parsley
Salt and black pepper to taste
Slap ya Mama to taste, Cajun seasoning
Louisiana Hot sauce to taste

Directions:
Rinse the peas once in cold water, removing any debris. Drain peas and set aside. In a cast-iron Dutch oven, heat oil over medium-high heat. Add smoked sausage and sauté 3 -5 minutes.

Add onions,celery, bell pepper and garlic. Sauté 3-5 additional minutes,stirring occasionally.
Sprinkle in the flour and blend well into the vegetable mixture. Add peas, stock, chicken bouillon and season using salt and pepper.

Bring to a rolling boil. Reduce to simmer, cover and cook until peas are tender, about an hour to an hour and half.
When peas are tender, add green onion, parsley, season to taste using salt, pepper, Cajun seasoning and Louisiana Hot Sauce.

Growing up our family tried not to waste any food. Money was always tight and we always had lots of mouths to feed.  We always had multiple friends spending the night with us and hanging at our house. Our friends loved to come to our house for many reasons, but mostly for Moms and Dads cooking.  After Thanksgiving and Christmas Mom would always boil the turkey carcass down and make a stock.  She usually would make a soup or stew.  Our Dad would make gumbo.  This is his recipe for Turkey Carcass Gumbo.  I made this for Andy last night and he loved it. 

Turkey Carcass Gumbo

Ingredients:

1 cup vegetable oil

1 cup all-purpose flour

2 ½ cups onions, chopped 

1 cup celery, chopped

3 cloves garlic, chopped

1 ½ tablespoons Slap ya Mama, Cajun seasoning  

1 pound andouille sausage, chopped

Good Morning and Merry Christmas to all! It’s that time of year again. December has come and with it all the joys of Christmas. But what is the real meaning of Christmas? Is it the gifts under the tree, the lights in the windows, the cards in the mail, turkey dinners with family and friends, snow in the yard, stockings hanging in the living room, and shouts of “Merry Christmas” to those who pass us in the streets? Is this really Christmas? I know for myself that Christmas time can be a little stressful and busy. We are all out shopping for that perfect gift for our loved ones. Just the smile on their faces when they open up that gift is just priceless. But I have chosen not to stress myself out this Christmas; instead I would like my family to focus on the real meaning of Christmas.

Well I have a lot to say today, first of all what a dominating performance by LSU in their 45-10 win over Auburn yesterday! In front of the second largest crowd in Tiger Stadium history (93,098), LSU completely dominated a good Auburn team in all three phases of the game – offensive, defense and special teams. The 35-point margin of victory was the largest ever in the 46-game series against Auburn dating back to 1901.

I have to confess that I had to tape the game and watch it later. That is something I really do not like to do. My Saturdays are such a ritual, I always cook and do my blogging and watch my football team. 1 small onion, diced
1/2 cup mayonnaise
2/3 cup Parmesan cheese
1 egg yolk
Dash Louisiana Hot Sauce
Slap ya Mama, to taste
Loaf French bread

Preheat oven to 375 degrees
Mix the first 6 ingredients in a small bowl. Slice French bread. Spoon onion mixture onto bread slices. Bake for 13 – 15 minutes. Serve warm. These are super easy, yummy and inexpensive.

Mini Muffalettas

We love this recipe because it’s easy, it’s very attractive to the eye and most importantly it taste wonderful. These little sandwiches are great to serve at your Christmas, New Years or football party.

Mini Muffalettas

Fetch-
1 loaf party bread Jewish or pumpernickel
Butter, softened
1 pound Genoa salami, sliced thin
1 pound ham, sliced thin
1 pound pepperoni, sliced thin
¾ pound Provolone cheese, sliced thin
¾ pound mozzarella, sliced thin
Olive Salad:
3 large garlic cloves, crushed
1 cup green olives stuffed with pimentos, chopped
1 cup pitted ripe black olives or Kalamatas, chopped
¼ cup celery, chopped fine
½ cup roasted red peppers, chopped
1 ½ tablespoons capers, rinsed and chopped
¾ cup olive oil
2 tablespoons white wine vinegar
3 tablespoons fresh parsley, chopped
½ teaspoon Italian seasoning

This is how we do it-
Get you a medium size bowl out and mix all of the ingredients for the olive salad. Spread you a thin layer of butter on the party bread. This will protect your bread from getting soggy. We can’t have you taking some soggy sandwiches to your Christmas party. Cut your meat into small neat squares. You want it to be the same size as the bread. Time to assemble. Holler for your children, husband or wife to come help you. This is easy enough for them to do and you can fit in some family time. Let’s do this thing – layer your salami, provolone, ham, mozzarella and then pepperoni. The sisters love us anything layered. We are almost finished guys and gals; the sister’s told you this was an easy one. Top with olive salad and you are D O N E. You can heat these baby’s up or serve cold. The sister’s like it both ways. Whatever floats your boat is good with us. Enjoy!

Good Morning to all you Grocery Lovers!

Just wanted to drop a couple of lines this morning and whisper in your ear all the fantastic shenanigans the sister’s have been up to.

You know sometime life gives you lemons and you are supposed to make lemonade. Well the sisters not only make lemonade we make lemon pie, lemon lush, lemon cake, lemon chicken, lemon meringue, lemon bars, lemon curd well you get the picture. We never do anything half-hearted we take it over the top.

We have absolutely thrown ourselves into trying to finish our cookbook and can we just say we have had a blast. This year has proven to be a world wind of anticipation, excitement and also struggles. With every struggle somehow God provided us with an opportunity…

Cajun Eggs

Get your day started with this over the top dish. This is an absolute must for breakfast or brunch. You just can’t go wrong with the Holy Trinity of goodness packed in these delightful eggs. We guarantee this will be a sho nuff crowd pleaser… You can bank on it!

Cajun Eggs

Ingredients:

6 tablespoons butter, divided
1 large can petite diced tomatoes, drained
½ cup celery, diced
½ cup bell pepper, diced
½ cup onion, diced
1 clove garlic, minced
4 tablespoons flour
1 cup milk
2 dashes hot sauce
Cajun Seasoning, to taste
10 boiled eggs
Bread crumbs and butter

Directions:
In a large skillet melt 2 tablespoons of butter. Sauté the tomatoes, celery, bell pepper, onion and garlic until the vegetables are soft. In a skillet make the cream sauce. Melt the remaining 4 tablespoons of butter, slowly add flour and stir until incorporated. Slowly add the milk and continue to stir until the milk and flour mixture is smooth. Combine tomato mixture and white sauce. Season with the Cajun Seasoning amd hot sauce. Grease 19 x 13 x 2 casserole dish. In the bottom of the dish place a layer of the eggs and then top with tomato and cream mixture. Continue until all the ingredients have been used. Top with bread crumbs and dot with butter. Bake in a 350 degree oven until thoroughly heated, about 20 – 25 minutes. Serve on top of the Sister’s Plantation Grits!
