The Sister’s Shrimp Creole

The Sister’s Shrimp Creole

Ingredients

2 pounds med-large shrimp, peeled or shells on

1 16 oz. can Crushed Tomatoes

1 (8-ounce) can tomato sauce

1 large onion chopped

2 stalks celery diced

2 cloves garlic diced

1/2 cup chopped green onions

handful of chopped fresh parsley

2 bay leaves

Salt & Pepper to taste

Slap Ya Mama Cajun Seasoning

Louisiana Hot Sauce to taste

1 tsp. sugar (neutralizes the acid in the tomatoes)

1 cup water or stock (shrimp or chicken)

2 tablespoons flour

3 tablespoons oil

Cooked white rice

I always peel my shrimp and save the shrimp shells and make a little shrimp stock.

Shrimp Stock: Rinse peelings, put in a pot and just cover them with water. Bring to a boil, add a pinch of salt  and boil for about 5 minutes. Let cool and strain the stock and you’re done. Substitute the water called for in the recipe with an equal amount of shrimp stock. Freeze the remaining stock (by all means don’t throw it away!)

Directions

In a large pan or pot, make a blond roux with the flour and oil. Add the onions and sauté for about 10 minutes. Add the celery and sauté for another 15 minutes. Stir in the tomatoes, tomato sauce, sugar, garlic and bay leaves and continue to cook for 30 – 40 minutes on a med-low heat stirring frequently. 

Add the water (or stock) and sugar; bring to a boil stirring frequently. Reduce the heat to med-low. Add green onions and parsley and stir. Simmer for 20 minutes covered stirring every five minutes. Hint: look at the thickness, will it cover rice like a thin gravy? If not add more flour. Add the seasoning and shrimp  and simmer for about 2 to 5 minutes.Taste and add seasoning as needed. 

Remove bay leaves and serve over hot cooked rice with a little hot French bread to sop up the gravy. Garnish with chopped parsley and chopped green onions.

Savory Cajun Crock Pot Soup

Let’s just say it doesn’t get much better than this. Is is a complete savory meal. This is so easy and just makes your soul feel good!

Savory Cajun Crock Pot Soup

Ingredients:

1 1/2 lbs Ham, diced

1 Meaty Ham Bone

4 quarts of beef stock

1/4 cup minced garlic

1 cup chopped onions

1 cup chopped celery

5 medium red skinned potatoes

1 can corn, drained

1 can green beans, drained

1 can sliced carrots, drained

1 14.5 ounce can crushed tomatoes

1 cup of black eyes

1 cup red beans

2 cup chopped cabbage or collards

2 cups large elbow macaroni

1 1/2 teaspoons Slap Ya Mama Cajun Seasoning

Salt and black pepper and  to taste 

Directions

In large crock pot, combine ham, ham bone, and all other ingredients with the exception of the elbow macaroni. Add macaroni the last hour and cook until tender. Cook on high heat setting for 5-6 hours or on low for 10-12 hours. Remove the ham bone before serving. Additional beef stock may be added to retain the volume of liquid. You may also wish to add any variety of your favorite vegetables to this recipe.

Welcome 2012 with Cajun Black Eyed Pea Dressing

Well grocery lovers the year is coming to an end and quite frankly I am thankful. I welcome 2012 with open arms. I truly feel that this new year will bring terrific change for the sisters and our families! As I sit here writing this morning and reflecting on 2011 there is joy along with sadness. Looking back on the months gone by, as a new year starts and an old one ends, I contemplate what brought us joy. Amy and I have been so blessed this year with new opportunities and becoming closer than two sisters could possibly be. Remembering how we enriched our lives by sharing countless hours formulating recipes, cooking, blogging, working on our cookbook. I would not trade all those tired nights for anything. We have grown in so many ways and it has allowed us to become better stronger women. We are looking forward to fresh, revitalizing interests, a variety of different new recipes, meeting interesting new people, material and personal successes and to make this new year the best one yet.

We hope this new year finds you healthier and happier, peaceful, content and satisfied.

We Southerners know that eating black-eyed  peas ensures good luck and prosperity so eat them up!!!!!

What you need:

1 pound of dried or fresh black-eyed peas

1 onion, chopped

1 clove of garlic, minced

1 quart of water

Salt, pepper and Slap Ya Mama Cajun seasoning, to taste

1/2 pound smoked ham, chopped

1/4 cup chopped parsley

1/2 cup chopped green onion tops

2 cups of raw rice, cooked

Dash or two of Louisiana Hot Sauce

What to do:

Combine peas, onion, garlic, water, salt, pepper. Cajun seasoning and ham in a heavy pot; bring to a boil, lower heat and cook until peas are tender and creamy (45 minutes for fresh peas and 2 hours for dried peas).

Add cooked rice, mixing gently until rice is coated with pea mixture; add parsley and green onion tops and mix.

 

 

 

 

 

The Almighty Cajun Sausauge Balls

Starting today we would like to share one recipe and one memory of our childhood at Christmas. Our hearts grow tender with childhood memories as we reminisce of beautiful times shared with our family. We seem to be better for having, in spirit, becoming a child again at Christmas time.

I really have to say we have truly had great Christmas’s growing up. They could be a little dysfunctional at times, but our mama and daddy made sure we did not go without on Christmas. We always had plenty of goodies and beautiful gifts under the tree. One of our favorite goodies was the Almighty Sausage Balls. We loved them. Mama always made them during this time and us girls would devour every one of them. Here is our recipe for these delicious sausage balls with a little twist.

My one memory for today is our Aunt Eleanor spent every Christmas Eve with us and Amy and I would always get up around 3:00 in the morning and so would Eleanor. Amy and I found it so hard to stay in our room, but the anticipation of Santa’s arrival would be killing us. We would always listen real careful to see if he was still there and when there was no sound, we would run like the wind to see all that Santa had left for us! Boy that was the best excitement! Even as an adult I find it difficult to sleep on Christmas Eve.  Christmas excitement is pure caffeine, no matter your age! Merry Christmas Grocery Lovers!

What you need! 

1 lb Breakfast Sausage

12 oz grated Cheddar cheese

2 tablespoons Mayonaise

2 cups biscuit mix

2 teaspoons Slap Ya Mama Cajun Seasoning

3 drops of Louisiana Hot Sauce

 What to do:

Mix all ingredients thoroughly. Roll in small balls, bake on ungreased cookie sheet for 20 minutes at 350F or until sausage is brown.

These can be cooked ahead of time. Refrigerate, then heat in microwave for a couple of minutes when ready to serve.

Freezes very easily

 

Slap Ya Mama Boil Peanuts!

Don’t be dumb, try you some! If your feeling froggy jump on this recipe this weekend and enjoy a little spice in your life!  

What you need to get:

2 lbs. of fresh or raw peanuts that are still in their shells

2 tablespoons of salt

1 bag of “Slap Ya Mama” Seafood Boil

1 tablespoon of red pepper (or more, if you are feeling frisky)

What you gotta do:

Go on and get you a big ole pot and throw them peanuts in, add enough water to cover them, enough water so it looks like they are doing the back stroke in a swimming pool! Then you are going to add your salt and stir it real good! Put that lid on your pot and turn the stove on high heat and let it “boil baby boil”! Then you are going to throw that sack of goodness “Slap Ya Mama Seasoning” and your red pepper in and turn down that heat, just enough so that you don’t create a mess and boil them babies over. You are going to let them boil for about 4 hours, during this time you may want to have you an adult beverage and turn up some tunes and sling you some tile, you are going to need to check on your peanuts to make sure you have enough water! They need to be swimming at all times!  But don’t forget about your peanuts or your mama will be slapping you! When they are done, drain the water off and serve! Enjoy your Cajun boiled peanuts!

Cajun Black Eyed Peas

Cajun Black Eyed Peas

Ingredients:

1 pound dried black-eyed peas

½ pound Cajun sausage, sliced thin

¼ cup vegetable oil

½ cup onion, diced

½ cup celery, diced

½ cup green bell pepper, diced

3 tablespoons garlic, minced  

1 ½ tablespoons flour

4 – 5 cups chicken stock

½ tablespoon of chicken bouillon granules

½ cup sliced green onions

¼ cup chopped parsley

Salt and black pepper to taste

Slap ya Mama to taste, Cajun seasoning

Louisiana Hot sauce to taste

Directions:
Rinse the peas once in cold water, removing any debris. Drain peas and set aside. In a cast-iron Dutch oven, heat oil over medium-high heat. Add smoked sausage and sauté 3 -5 minutes.

Add onions,celery, bell pepper and garlic. Sauté 3-5 additional minutes,stirring occasionally.

Sprinkle in the flour and blend well into the vegetable mixture. Add peas, stock, chicken bouillon and season using salt and pepper.

Bring to a rolling boil. Reduce to simmer, cover and cook until peas are tender, about an hour to an hour and half.

When peas are tender, add green onion, parsley, season to taste using salt, pepper, Cajun seasoning and Louisiana Hot Sauce.

Crock Pot Cajun Chili

Well I have a lot to say today, first of all what a dominating performance by LSU in their 45-10 win over Auburn yesterday! In front of the second largest crowd in Tiger Stadium history (93,098), LSU completely dominated a good Auburn team in all three phases of the game – offensive, defense and special teams. The 35-point margin of victory was the largest ever in the 46-game series against Auburn dating back to 1901.

I have to confess that I had to tape the game and watch it later. That is something I really do not like to do. My Saturdays are such a ritual, I always cook and do my blogging and watch my football team. Yesterday was an exception, my daughter had an opportunity to attend a workshop with our good friend Marla that has a great talent company called It’s a F.A.C.T. I just have to tell you how impressed I was with all the unbelievable talent right here in Albany, GA! These kids are not only talented, but they are kind, good-hearted children. You can just tell they were raised right. I have a feeling these kids will go far with their acting careers. I was so grateful that I let my selfishness go out the window and spend the day with this astonishing group of kids. Their parents must be swollen with pride with them and Marla for their commitment to this outstanding program. What a great Saturday to spend with Alli and all these beautiful children.

Also, today is my Savory sister’s 1-year anniversary and I want to wish her and her husband Andy a very happy anniversary! One year ago, Amy and I along with some wonderful friends and family pulled together an extraordinary event. Yes, Amy and I planned, cooked, decorated, facilitated, and directed her entire wedding. Can I just tell you it was absolutely grand. If it were not for all our friends and our beautiful stepmother we would have never accomplished this beautiful event. We had such an enormous time and the food was to die for. It is quite amazing what you can accomplish with a little help from your friends and family!

With all this being said, here is our recipe for Crock Pot Cajun Chili! This is an easy recipe and you can even make it the night before. It is better the next day. It is really lip smacking good! Hope you enjoy!

What you need

 1 lb of ground beef

1 lb ground pork

1 bell pepper (diced)

1 sweet onion (diced)

1 tablespoon minced garlic

2 tablespoons chili powder

2 teaspoons ground cumin 

2 cans of Rotel tomatoes

1 can of crushed tomatoes

1 can of pinto beans

1 can of black beans

1 can of dark red kidney beans

1 can of sweet whole kernel corn

2 teaspoons Slap Ya Mama Cajun Seasoning

Dash of Louisiana Hot Sauce

2 cups shredded cheese

Chopped green onions (for garnish)

 What to do

First go ahead a turn you crock pot on to medium heat so it can get hot. In a skillet, cook beef and pork over medium heat add in onions, bell pepper and garlic cook until meat is no longer pink and veggies are tender; drain. Transfer to a slow cooker. Add the next ten ingredients. Cover and cook on low for 8-10 hours or on high for 4 hours. Garnish individual servings with cheese, green onions and sour cream if desired.

 

Crock Pot Shrimp and Grits

Traditionally I use heavy cream and no chicken. I wanted to try something in the crock pot and thought the cream of shrimp would be good and it was pretty darn good. We did a recipe last week with cream of shrimp and it was really yummy.  My boss Beth does a fish dish with cream of shrimp and it is great . I had some chicken so I added it to the pot too.  I couldn’t think of another name so….. Shrimp and grits it was. It was very creamy and delicious.

½ stick of butter

½ cup of Green bell pepper

½ cup of Red bell pepper

¾ cup of celery

1 cup of onions

4 cloves of garlic

1 ½ pounds of chicken breast tenders

8 ounces of Andouille Sausage, cut up

2 cans of cream of shrimp soup  

Slap ya Mama (Cajun Seasoning) to taste

Salt and pepper to taste

1 pound of Shrimp

2 heaping tablespoons of savory garlic cream cheese finishing sauce

Directions-

Turn crock pot on high 

Add butter to crock pot

Dice onions, garlic, bell pepper and celery and add to pot.

Add chicken sausage, cream of shrimp, salt and pepper and Slap Ya Mama.         

Turn heat down to low and cook for a couple of hours (until chicken is done)

Increase heat to high and add shrimp and finishing sauce, continue cooking until shrimp are pink (approximately 15 minutes)

Serve over grits
